Glorious Mexico Weekend

 Oh, Mexico.
You are fabulous, glorious and all the other pretty adjectives I can think of.
The company that my husband works for sat a goal for each salesmen last year. And, my sweet husband worked extra hard to reach his goal and guess what—he did! I believe he was even tied for the most sold! #proudwife
Since he met his goal, he was rewarded with a trip to Mexico. So, this past weekend we packed our bags and headed to Cancun with eight other couples. We arrived mid-day on Friday and spent the next three days relaxing by the pool, walking the beach, eating delicious food, spotting lizards and iguanas and hanging out by the strawberry frozen yogurt machine. Yum!

I honestly didn’t think I would enjoy Mexico as much as I did, but let me tell you—if you ever get a chance to go, you should definitely go. It is quite an experience and I am so thankful for my husband’s hard work that got us a trip to the Valentin Imperial Maya.

Crustless Pizza for the Win

I think my husband has made a hobby out of sending me random recipes he finds on Facebook. I usually ignore, but this one I opened and thought A. this would be super easy and B. I have all the ingredients already so... I went for it. And, I am glad I did. 

He liked. I liked it. And, even better I cooked it in the crock pot with a crock pot bag, so the cleanup was easy peasy. 

Super simple recipe too. 

All you need is :

2 pounds hamburger meat, browned
14 oz Pizza Sauce
2 cups Mozzarella Cheese
Pepperonis
Pepper
Salt
Garlic Powder 
Onion Flakes
Italian Seasoning

For real-- super simple. 

Brown the hamburger meat with salt, pepper, garlic powder, onion flakes and Italian seasoning. (I don't typically measure seasonings, so however much you think!) Place in the crock pot. I sprayed the liner of the crock pot with cooking spray to make it easier to get out. Add a little cheese on top of the hamburger meat and mix in to the meat. 

Place the pizza sauce over the hamburger meat/cheese mixture. And, then place the remaining cheese on top of the sauce. If desired, place pepperonis and then sprinkle a bit of cheese on top of that. 

And that is it. 

Cook on high for four hours and dinner is done. 

I also buttered some bread with garlic powder and broiled on low for a couple of minutes-- you know because this is a "crustless" pizza, so why not add a little bread to this semi low cal recipe. 

We had a ton of leftovers and Drew has already had it twice since I made it. So, I think it is safe to say that this one will be going on the menu planning rotation!

Snow Day/Sick Day 2017

It is a snowy day here in Oklahoma and I am stuck at home with a cold. Blah. 

Thankfully, I am feeling better today and am actually up and around feeling like doing some blogging and goal planning for 2017-- one of my favorite parts about a new year! I actually wrote the words "2017 Goals" about a week ago and then proceeded to move to the next page to write a packing list for Mexico. Whoops. (However, we do leave for Mexico in a couple of weeks, so I don't feel too terribly bad! ha)
I have got some good ideas-- and hopefully today is the day that at I will put those to paper. I am really excited about those new "ideas" I have swirling around in my head- including a LOT more blogging, more farm/ranch photography, launching a new project (or 2) and even working on my cooking skills (you are welcome, husband) in 2017.  

I have also been working on my yearly to-do list and so far I am not making much progress on it either-- like none at all, so there is that too! Boy, I have lots to work on! 
So, basically the take-a-way here is I am going to try to do more blogging under Frilly Farm Wife this year and it should be a good time, so stayed tune!
